So I checked back and the onslaught of cameos from different Spawns occur in issue 162, not 163. This is the page in question, where you can see She-Spawn (not Nyx, but another that looks like the toy from series 4 and 21), Spawn the Black Knight (from the cover of Dark Ages #1), Spawn the Black Knight (from series 11 [Yes there are two black knights, three if you count Cog in the HBO cartoon]), Spawn the Black Heart (from series 14), Spawn the Bloodaxe (from series 22), Gunslinger Spawn (from issues 119, 174, 175), Zombie Spawn (from series 28, you can see his scythe in the background), Mandarin Spawn (from issue 165 and series 14, his severed head is toward the right of the page), and one Spawn who I can't quite recognize (the largest one on the left side of the page).
I've read the entirety of Dark Ages, and the book focuses solely on Lord Covenant. The Black Knight and Black Heart do not appear. The Black Knight from the cover of issue 1 of Dark Ages may or may not be Covenant, as the book ends with Covenant escaping the Hellspawn curse, so if he really is appearing in hell in 163, it would mean that the ending of Dark Ages is now retconned (and it might, as recent issues of Spawn have revealed that a Spawn from medieval times is still alive...could be the medieval Spawn from issue 9, 14-15 or Covenant from Dark Ages).

Poacher, Lillith, Young Cogliostro, Vertebraker, LLyra as a Goddess?

I plan on checking into those when I have more time; either later today or tommorow.
And as for the "desert fight" Spawn, you probably mean issue 131.
The cover was later made into a figure (that I actually own).

That figure is pretty cool. I believe that that one is only "present" in the cover of the before mentioned issue, or do we see Spawn in that outfit on some interior art? I think we don't.

You're right. It was a conceptual image only. The interior is the second part of the "Seven and a Half Ghosts" story (an underwhelming story in my opinion), where Spawn and Twitch search for Twitch's son Max (who disappeared after 'The Kingdom' story in issues 107-113), and find him in a mansion haunted by seven ghosts. Spawn tries to free him but it turns out that some demon is holding Max and the ghosts against their will. Twitch, of course, gets shot (because god forbid Twitch goes more than 30 issues without getting hopsitalized), and Spawn vows to rip the arms off of the demon and beat him with them (and he does, and it's awesome). They rescue Max and everyone lives happily ever after (until Max dies off-panel somewhere down the line and Jim Downing talks with his ghost in recent issues).
So anyway, I've checked through the Violator vs. Badrock miniseries, and Vetrbreaker does not appear, and is not a Phlebiac brother (they are Violator, Vacillator, Vindicator, Vandalizer, and Vaporizer).
Regarding young Cogliostro, he is only ever shown as Cain during the "Season in Hell" story, and as an aging man in the Dark Ages comic. The HBO cartoon had a flashback of Cog as the Spawn known as the Black Knight. To my knowledge Cog never appears as the figure in question, and it was only a concept.
I've also looked up Spawn: Godslayer (I don't own any issues), and it looks like Godess Llyra is present in the story, so the figure probably does appear in the comics.

Ok, so now the only ones in doubt were Warrior Lilith and Poacher. Lilith is on Curse of the Spawn 11 an Poacher on Curse of the Spawn 15.
